A couple months ago, I bought a panini maker, which I guess is just a glorified George Foreman grill. I went Panini crazy for a couple weeks making various concoctions of sandwiches. Finally after making several savory sandwich meals, I attempted to make a desert type dish.
I did a variation on the fairly well known peanut butter and banana sandwich, opting for Spekuloos, a gingerbread spread you can pick up from the Wafles & Dinges truck in New York, and Cinnabon cinnamon bread, which I found in my local grocery store.

This morning, looking for a delicious breakfast treat for my boyfriend, I took the Cinnamon Swirl bread and spread a bit of the Spekuloos in the middle.

After spreading putting the sandwich together, I added a little bit of butter to the panini maker, just enough so that the sandwich wouldn’t stick, and put them in for just a couple minutes until the bread connected and enclosed the Spekuloos inside the sandwich.

Of course, that was good, but not good enough. Last night we were watching one of our favorite cooking shows, Bitchin Kitchen, hosted by Nadia G, a badass Italian chick who cooks a mean dish and has an pretty great sense of humor to boot. Nadia was making French Toast. So why not? What could be better than a Spekuloos stuffed French Toast topped with Bananas!
I then dredged the sandwich in egg, brown sugar milk and salt, and popped it in a pan.

After a few minutes of frying it up in some more butter, I topped it with some bananas, a bit of syrup and went to town! The boyfriend demolished his as well, sans bananas of course.
