I am not a fan of flying. As a matter of fact, I have flown a total of 3 times in the past 6 years. Once for work, once because it was a free flight home and I couldn’t pass it up and now, once to Colorado to visit my mother. I had 4 vacation days to burn at work, and so I called up my mom, suggested that I come visit her and then took a bunch of xanax and got on a plane.
My mom lives in Lakewood Colorado right on the edge of a beautiful park which is constantly busy with activity. It’s a great place for people to walk, and tons of people bring their dogs here. My mom is no exception. She has a dog named DayZ. I would have written Daisy, but that’s not her name. It’s DayZ. She’s a rescue Ori Pei. (Sharpei pug)

Once my DayZ, my mom and her husband David knew I was coming, they started to plan a party. The party was a Winter Solstice/Festivus party where we welcomed the light back into our lives and then aired all our grievances. We all walked out to the park holding candles and flashlights and lanterns and stood in a circle in the cold winter air. The next day it was like 60 degrees, so I figure, it must have worked.
We made all sorts of delicious foods for the party, and I’ll be posting those recipes in upcoming days, but wanted to start with the hot apple cider and rum recipe from Emeril since it was by far the biggest hit of the night.
A quick and easy recipe, the apple cider is store bought, but the spices we added were fresh, which gave this drink a nice warm flavor to go with the temperature of the drink. We left the cinnamon sticks and the rum on the side and offered them as options in case some people didn’t want the rum. Turns out, everyone wants the rum.
