I’ve really been working at saving money lately. Living on my own, I have to be very careful and pick and choose where my money goes. Tonight I stopped at the grocery store and was debating what to do for dinner. Although I was craving some corn fritters, I decided to hold off and save those for another day. I needed some comfort food tonight, and I wanted some potato chips.
I started thinking about buying a bag, but the realized that I had potatoes at home! I also have a mandolin slicer that I’ve used a few times for things like shoestring fries and thinly cut onions or peppers for Thai Chicken dishes, but never for the thing it should be used for. Potato Chips.
This dish cannot be more simple. Potato. Slice it thin in the Mandolin (that rhymes!). Soak potato slices for an hour. Pull the slices out and pat dry with paper towels. Sprinkle with sea salt.
Heat Peanut or Canola Oil to 350-380 degrees. Put in approximately 10 potato slices at a time and let cook until just browning. Take slices out and start a new batch.
For any leftover chips, just put them in a baggy and they’re good for the next few days. Just as good, and maybe even better than store bought!
