Anyone from Cincinnati can tell you immediately what this is. Anyone from Texas will claim that this isn’t real chili.
At the age of 16, I got a job at a Skyline Chili in Fairfield. The same skyline I had gone to as a customer for years. This was the ideal job for a person whose diet mainly consisted of hot dogs. I started out working the drive thru, then worked my way to waitress, which it turns out I hated, and finally found my niche on the “steam table”. I was more assembling than cooking, but I loved every minute of it. Eventually I made my way out of food service and into retail, but I ate at Skyline frequently regardless.
When I moved to NYC, I noticed the big apple was missing 1 thing. Chili on top of spaghetti with cheese. I wrote to skyline’s headquarters and asked them to build one in NYC. They told me that they only build skylines in the Tri-state area (Ohio, Kentucky, Indiana), but I know for a fact they have one in Florida. Liars. I called them out on it, but never heard back.
The good news is that you can easily make your own, and Skyline also sells their chili online and will ship it. They also sell hot sauce and oyster crackers. They have the best hot sauce ever.
Just like most recipes I make, I found this one on Cook’s Illustrated’s website, and it tastes just like home!
